The Meaning Behind Our Name

We named our restaurant “SORA” (昊),
a character that symbolizes the vast sky shining brightly under the sun.

Just like the wide, open blue sky, we want to create a refreshing and uplifting space that brings smiles to everyone who visits.
The name also reflects our aspiration to share the spirit of Kyoto with the world through our cuisine.

At SORA, we offer three exclusive branded eel varieties that are not available at any other restaurant in Japan:Tenku Unagi, Chikushikin Unagi, and Tosa no Igossou — each served with carefully selected ingredients that highlight their unique flavors.

Each eel is lovingly raised with a special focus on its feed and environment.We invite you to experience the exquisite flavor of our finest unagi.

    We cook our rice using a special blend developed in collaboration with Hachidaime Gihey, a long-established rice shop in Kyoto. We serve only what we truly believe tastes best when enjoyed with our pickles and eggs.

You can choose your preferred type from our three top-brand unagi.

Tenku Unagi, Tosa no Igossou and Chikushikin Unagi

We raise three premium unagi brands—surpassing even wild eel—with special attention starting from the feed.
To bring out the natural flavor, aroma, and texture of the eel, we carefully prepare each one in-house: filleting, skewering, and lightly grilling with shirayaki before slowly finishing over high-grade Binchotan charcoal.
Our rice is a special blend developed with Kyoto’s long-established rice purveyor, Hachidaime Gihey.
We use Ran-oh eggs from Oita, and every element—including our pickles and sauce—is additive-free.
